Here we have it! The first recipe on pinkgiggles. I modified this recipe from a recipe I saw on a blog I’ve been reading (and loving btw): www.girlmeetslife.com
One of the key reasons for testing out this recipe is trying to create a healthy breakfast for my boyfriend on the go. Most importantly, its gotta be secret healthy. This basically means that I don’t want him to know that they are low fat and full of fiber. sneaky sneaky 😉
- ½ ground flax
- 1 cup all purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ packed light brown sugar
- 1 cup hemp milk
- 1 egg
- ½ tsp vanilla extract
- 1 smashed banana
- 1 cup wild blueberries
Bowl 1: Combine ingredients 1-5.
Bowl 2: Wisk ingredients 6-9.
Combine the 2 bowls and add your smashed banana and berries!
Grease or line muffin tin and fill ‘em up! Bake at 350 degrees for about 20 mins. Makes about 10 muffins. Topped with some warm almond butter, they are absolutely deeeee-lish!
The real test will be whether or not if Mr PinkGiggles deems them edible (he’s not a fan of flax). I personally, love them. Let`s hope there are still some left by the time he gets home..
